Mango Ice Cream

Ingredients

  • 200g frozen mango cubes
  • 25ml lemon juice
  • Sweetener to taste (e.g., Sötströ, about 100ml)
  • 100ml heavy cream

Instructions

  1. In a food processor with the blade attachment, add:
    • Sweetener
    • Lemon juice
    • Mango cubes
  2. Start the food processor.
  3. While the processor is running, slowly pour in the heavy cream in a thin, steady stream (similar to making mayonnaise).
  4. Stop the processor and scrape down the sides with a spatula to ensure everything is well mixed.
  5. Serve immediately. This dish does not freeze well.
